Lemon Garlic Quinoa Salad

If you are weary of boring salads, you have to try this recipe! Gone are the days where I try to force myself to eat a plain green salad with grilled chicken. If we are gonna eat a salad, it better taste phenomenal and luckily, this Lemon Garlic Quinoa Salad does not disappoint!

This salad is vegan and gluten free naturally, it’s only made with whole ingredients, is packed with those micros that I love, and it’s filling because of the protein from the chickpeas and quinoa. I use a lot of garlic for the dressing, one trick I always use with garlic is to crush it and let it sit for 10 minutes before using to activate the allicin which is the cancer fighting compound in garlic.

Ingredients:

For the salad:

1/2 chopped or sliced cucumber
2 chopped small tomatoes
1/2 chopped red onion
1 avocado
1 can chickpeas drained and rinsed
3/4 cup dry quinoa – cooked to preferred consistency

Dressing:
1/4 cup olive oil
Juice of 1 lemon
1 tsp black pepper
7 garlic cloves
Salt to taste

Blend all ingredients for the dressing in a high-power blender. Mix all the salad ingredients in a large bowl. Pour dressing over salad. I of course have to garnish everything with cilantro the Desi way but that’s completely optional 😂
