Save this recipe for your next Meatless Mondays (although can be enjoyed any day of the week π). I used cashew cream mixed with marinara and skipped the cheese because honestly you donβt even miss it. Use any vegetables you like, I used kale, red pepper and mushrooms and it was a delicious micronutrient dense dinner π€€
Ingredients:
1/2 box fettuccine
2 cups marinara
2 cups cashew cream
5 cloves garlic minced
A few handfuls of shredded kale
1 cup sliced mushrooms
1/2 sliced red pepper
1 tsp black pepper
1 tsp Italian seasoning
Salt to taste
1/2 cup avocado oil
Directions:
Heat oil in a pan
Fry garlic until light brown
Add in marinara
Add kale, mushrooms and red pepper and let simmer until kale softens
Add cashew cream, salt, pepper, Italian seasoning and simmer on low heat until cream thickens
Add in fettuccine and serve immediately
