Chicken Kathi Rolls

Do you love boti rolls, kabob rolls, or kathi rolls but feel overwhelmed and are always looking for an aunty to make them for you? Look no further. Save this Chicken Roll recipe. It’s made in one pot, with minimal prep and ingredients and seriously tastes phenomenal. I use Kawan Paratha for the flakiest most delicious paratha roll ever and Shan Tikka Seekh kabob masala to make this recipe incredibly easy to put together. The longer you marinate the chicken, the juicier it will be but I have made this recipe with just one hour of marination when I’m short on time.

The beauty of cooking at home for yourself is you get to reduce the oil and salt compared to restaurants. I personally don’t feel the need to fry my parathas when I am making these and I also don’t feel the need to use too much oil to fry the chicken since the leg and thigh meat makes the chicken super tender as is. I don’t add additional salt since the masala packets already contain so much sodium. I increase the amount of turmeric I use to up the antioxidant content. I use dark meat instead of chicken breast because that’s what I prefer but you get the point ❤️ I hope you enjoy making these as much as I do!

Chicken:
1 lb boneless thigh/leg meat (can use boneless chicken breast if preferred)
1/2 cup plain yogurt
1/2 package Shan Tikka Seekh Kabob masala
1/2 teaspoon turmeric
1/2 teaspoon chaat masala
1/2 teaspoon mixed cumin and coriander powder (or 1/4 teaspoon of each individually)
1/2 teaspoon red chili powder or paprika 1/2 tablespoon ginger garlic paste 1/2 tablespoon green masala (see my recipe under basics) 2 tablespoons avocado oil

Directions:

Mix everything together in a bowl (except oil, ginger garlic paste and green masala) and let that chicken marinate.

Once chicken is marinated, put 2 tbsp avocado oil in a pot. Add 1/2 tbsp ginger/garlic paste and 1/2 tbsp green masala (see basics- green masala recipe) and let it fry for a minute. Add chicken and fry until cooked through. You can throw in some grated ginger, cilantro, and chopped serranos if you have them on hand but if not it’ll taste just as good without them.

Add mint raita and lots of onions to your paratha with lots of chicken and eat eat eat!
